100% Whole Wheat Honey Bread

My family has taken on the challenge of not eating processed foods. It is HARD but I think it will be worth it. This means that I make bread once a week. This recipe is a combination of a few and so far is my favorite ALMOST 100%'whole wheat bread.



It is very soft and delicious


1cup warm water and two tablespoons of dry active yeast, let it set for a couple minuets.



 Add 1 cup Hot water and 1/2 cup milk

1/3 cup oil

1/3 cup honey (p.s. Do the oil first then the honey slides right out of the cup.)

Two eggs 

1/2 cup white flour (hence the almost100%)

5 1/2 cups whole wheat flour 

1/3 cup wheat gluten.


Mix for 1 minute 

Add 1 Tbs salt (do this now so not to kill the yeast)

Knead for 5 mins with bread hook

Take dough out of the bowl and spray the bowl with nonstick cooking spray put the dough back in and spray the top of the bread.
Cover with a grocery store sack

Pre heat oven to 170 or lowest setting when heated turn the oven off

Let rise in oven for 30 minutes.




 Punch and Dump on counter

Half dough 

Pat flat 

Roll into loaf 

Place in greased loaf pans

Pre heat oven to 350

Let rise on the stove for 30 miniutes 

Bake for 25 to 30 minuets 
 

Rub with a stick of butter directly out of the oven. 

1cup warm water
2 Tbs dry active yeast

1/2 cup milk

2eggs
1/2cup white flour
5 1/2 cup whole wheat flour
1/3 cup wheat gluten
1Tbs salt

my date with robin hood of old

On Saturday, the hubs and I had the opportunity to go on a date for the first time in 2 months. Dates are in short supply when you're having babies. Well Grammy Pammy and Papa Kip (my parents) volunteered to watch our munchkins, so we jumped at the opportunity. We dropped them off with a few toys, a full bottle of milk, and got out of town. We went to Antonito, any of you that have been to Antonito might not find this the ideal date location, but you are sadly mistaken! First, we went to dinner. Now there is the ongoing debate wich restaurant is better in this small town; The Dutch Mill, or Dos Hermanas. Well for me personally it is Dos Hermanas, and here is why I think this is. When I was growing up, in the winter my family would go snowmobiling, and on our way home we would always stop and eat at Dos Hermanas. There was just something about the warm Mexican food after I had been cold all day that made me fall in love, and now this is my favorite restaurant. So Spence took me there we each had a DELICIOUS chili burger, mine with red his with green, and washed it down with a couple of soda pops!

Recently, someone put an archery range up in Antonito. The kids and I had gone to a birthday party there a few weeks ago (Spencer was on the truck) and had a blast! So I mentioned to Spencer that we should go, and the little dear remembered and threw our bows in the pickup before we left home. We showed up and started to shoot the 3D range which is a bunch of life size targets placed all around this indoor range. We were killing it!  I felt like flippin Katness and Spence was like Legalas! Okay maybe not quite; his hair is a little too short, sooo he was Robin Hood. We would each shoot our four arrows then go pick them up holding hands the whole way giggling, frolicking, throwing heart shaped confettie at each other, (swoon) just kidding.  We actually raced to see who could get theirs the fastest, but my strong sweet heart always won because he would have to pull my arrows out of the plywood behind all the targets; because I was too week and dainty to do it myself, and I kept missing the darn antilope so they would stick in the wood behind it. (Humph)

Well at this archery range they have a life like simulator (which I called a stimulator on accident and got teased for A LOT, followed by a very inappropriate comment, oh well a slip of the tounge haha. Who knew one little T could change a word so much. It's a good thing I grew up with a bunch  of boy cousins always giving me a hard time or I might have been a little mad.) So, the SIM-U-LATOR is basically a long tunnel with a giant screen at the end of it, and different videos of moving animals come up and you try to shoot the animal, and where ever you hit the screen the game tells you if you hit it in the body, vitals, bullseye, or totally miss it. It was so fun!  Some of the targets are the obvious elk, deer, and bear however some of the stranger ones included a wasp, duck, and a walking stick bug thing (because the first thing I think when I see one of those is here let me shoot this with my bow and arrow) but none the less it was challenging and fun! All too soon our time was up and we needed to begin our journey back to the kiddos. If any of you valley people are into archery, and are tired of doing it in the cold and wind this is your place! In other news Houston went to church for the first time this week,  and yes I did make them match. Even though my dad says "boys don't match, matching is for girls." I think they look adorbs!

My little fam

Like most mothers out there I don't have enough to do, so I thought I would start blogging! Actually, Im hoping to use this more as a journal, because you know everyone secretly wants the whole world to read their diary! Well a little about me; my name is Ali McDaniel.  I am married to a total man dime and the love of my forever, Spencer McDaniel. Seriously though, he is the hardworkin country boy I always knew I would end up with. We have two handsome, sweet, vivacious boys; Rayce Lee(2 1/2) and Houston Mathew (5weeks). I am lucky enough to have married a "hardworkin" man, who makes it possible for me to stay home with the littles. Maybe that's why I am doing this blog because I am in desperate need of an adult conversation, and I guess one in my head is better that nothin! I am from a small town in Colorado. Spence and I bought a house in the country, outside of Alamosa. Our house is nestled under the biggest trees for miles,which was a big seller for me. I love my trees because our house is surrounded by Chico bushes and sage brush. We have so many fun family adventures that seem worthy of wrighting down. Hope you enjoy.

This is Rayce, he loves tractors, trucks, being outside, and loving up on his baby brother. Rayce is commonly known as Rayce Car. He is such a fire cracker, he lights up our lives and we wouldn't want him any other way. He constantly has us in fits of laughter with all of hilarious things he rattles off that little tongue,

Our new little slice of heaven just arrived on January 30th he instantly stole our hearts. Houston is such a good baby. He loves to watch his big brother dance around and be silly. Big brother is the only one to get a smile from him so far, try as we might he won't smile until big brother comes around. What a blessings theses new little people are.  Obviously they came straight from the Saviours arms to ours. How amazing is that.

We had a fun snow day the other day. Houston had his first snowmobile ride at a whopping 4 weeks old,  we can't decide if that makes us bad parents or AWESOME parents, I'm going to go with the latter!
