100% Whole Wheat Honey Bread

My family has taken on the challenge of not eating processed foods. It is HARD but I think it will be worth it. This means that I make bread once a week. This recipe is a combination of a few and so far is my favorite ALMOST 100%'whole wheat bread.



It is very soft and delicious


1cup warm water and two tablespoons of dry active yeast, let it set for a couple minuets.



 Add 1 cup Hot water and 1/2 cup milk

1/3 cup oil

1/3 cup honey (p.s. Do the oil first then the honey slides right out of the cup.)

Two eggs 

1/2 cup white flour (hence the almost100%)

5 1/2 cups whole wheat flour 

1/3 cup wheat gluten.


Mix for 1 minute 

Add 1 Tbs salt (do this now so not to kill the yeast)

Knead for 5 mins with bread hook

Take dough out of the bowl and spray the bowl with nonstick cooking spray put the dough back in and spray the top of the bread.
Cover with a grocery store sack

Pre heat oven to 170 or lowest setting when heated turn the oven off

Let rise in oven for 30 minutes.




 Punch and Dump on counter

Half dough 

Pat flat 

Roll into loaf 

Place in greased loaf pans

Pre heat oven to 350

Let rise on the stove for 30 miniutes 

Bake for 25 to 30 minuets 
 

Rub with a stick of butter directly out of the oven.

5 1/2 cup whole wheat flour
1/3 cup wheat gluten
1Tbs salt
